Ramen, Redefined: A Visit to JINYA Ramen Bar in Downtown Colorado Springs

Let’s talk about ramen. Not the 25¢ packets you lived off in college (though we all did it). I’m talking about real ramen, the kind that has a rich, savory broth, perfectly chewy noodles, and toppings that feel like a warm hug for your taste buds. Ramen has a fascinating history, originating in early 20th-century Japan after being inspired by Chinese wheat noodles. Since then, it’s grown from a humble street food to an international obsession, with regional variations and gourmet twists in every corner of the world.

This weekend, I had a chance to check out JINYA Ramen Bar just before their opening in the heart of downtown Colorado Springs, and wow, it did not disappoint!

The location is ideal. I parked my bike near Pikes Peak and Nevada and strolled a few blocks down to the restaurant at Nevada and Costilla. If you’re already downtown shopping, hanging out, or just craving noodles, it’s an easy stop to make.

Inside, JINYA is vibey in all the best ways. Think warm lighting, modern design, and an open-air kitchen that lets you see (and smell) the magic happening. I can already tell their covered patio is going to be the place to slurp noodles all summer long.

We kicked things off with a few small bites—gyoza dumplings, tempura-fried Brussels sprouts (so crispy and flavorful), and some classic edamame. One thing that stood out? Their vegan-friendly options. From Impossible meat to tofu-based ramen, the menu was super inclusive. I’m not vegan, but several of my friends are, and it’s rare to find a place that makes everyone feel catered to. Big win.

Then came the main event: ramen. I went for the Spicy Chicken Ramen, opting for the mild spice level. That said, I definitely gave it a little boost with the hot sauce on the table (a move I recommend if you like a little kick without going full five-alarm fire). The broth was rich and layered, the chicken super tender, and the noodles had that perfect bounce. My friends ordered the Creamy Spicy Vegan Ramen and the Tonkotsu Red Ramen—both were total hits at the table.

So if you find yourself downtown and you're in the mood for something warm, flavorful, and comforting, JINYA is a great spot to check out. Whether you're a longtime ramen lover or just curious to try something new, it's a cozy place with good vibes and even better noodles. I’m already thinking about what I’ll try next time!
